Support Trezor Zcash PCZT versions

Summary

• support extracting Trezor Zcash PCZT signatures from both transparent v4 and v5 signed transactions
• pass Zcash transaction metadata through direct Trezor signing instead of hardcoding v4 values
• add focused coverage for transparent v4/v5 signature extraction
