Fixes: #761

Adds documentation and a worked example showing how to configure Airflow 3.x DAG bundles via envOverrides. Includes a comparison table mapping dagsGitSync fields to their Git connection / GitDagBundle equivalents, prerequisites, limitations, and a decision guide for when to use bundles vs git-sync.

LGTM. Thanks Andrew a really good piece of docs. I like the comparison to our GitSync resource, that helped a lot.
