This goes slightly further, as I found things during this. There are a lot of stale things here. This is only a partial fix; I did only the very low impact things (including the dependabot overrides), and will have follow-ons to tackle the deeper issues.
We should migrate off balancer-labs, rebuild theme so that it's consistent with the main docs, and bump the SDK reference (currently pre-V3), among other things.
